Cookie Challenge #2
Blueberry Oatmeal cookies – gluten-free
Have you been to Lulu supermarket in Jeddah? It’s a huge supermarket with a variety of products local and imported from all over the world. What I like most is the fruits and vegetables section. The prices are reasonable, where can you get a pack of blueberries for 6 SR? Only here in Lulu supermarket!
Yes! My next healthy ingredient for my cookie diet challenge is blueberry.
Researched shows blueberry is a good source of vitamin C which is good for our immune system. It is also rich source of anti oxidant and contain the health promoting phytochemical, anthocyanin. But of course, eating organic fresh is better than adding it in cookies. Take note ladies, my challenge is to make cookies more healthier and enjoy the process. 1 cup fresh blueberries
Preheat oven to 350°F. Mix all dry ingredients in a medium bowl. Set aside. Whisk egg, honey, oil, vanilla in a separate bowl. Mix together with the dry ingredients, mix well then add the blueberries. Chill for about 20 minutes.Spoon on to the silicon mat, flatten a bit and bake it for 10-15 minutes.
This is more crunchy than the Healthy cookie challenge #1 Carrot oatmeal cookie, also I love the balance of sour and sweet nutty, oh! I forgot to mentioned, the granola oats I am using, there’s a mixture of pumpkin seed on it.
A good breakfast cookie with a glass of milk.
