Cranberry brown rice /almond flour cookie
Cranberry is a good source of Vitamin C, it has also anti inflammatory benefit thus helping in lowering the risk of periodontal disease, yes ladies, it helps to make our gums more healthy, besides thorough brushing of our teeth everyday 🙂
Instead of using all-purpose flour I used brown rice flour and almond flour with a little combination of oatmeal too. How healthy can you get?
I also added some walnuts.
Ingredients:
1 1/4 cups brown rice flour
1/2 cup almond flour
1/2 cup granola flour
1 cup fresh cranberries
1 egg
1/2 cup canola oil
1/2 cup honey
1 tsp vanilla extract
1/2 tsp baking soda
1/2 cup chopped walnuts
Instructions:
Preheat oven to 350F. Mix all dry ingredients together in a medium bowl, set aside. In a separate bowl beat the egg, add oil, vanilla, honey and mix it with the dry ingredients, add the fresh cranberries. Mix thoroughly. Scoop and flatten on top, if you desire you can add berry on top. Bake for 10-15 minutes.
Ladies, this is good for breakfast too, try it!
