My 2nd Hiking Adventure in Oahu: Makapu’u point Lighthouse Trail

I’m one of a lucky woman who has friends around the world and even though we don’t regularly get in touch, we know deep in our heart  we care for each other. Adora is one of the few I cherished. No matter how far we lived apart or how many years we haven’t seen each other, the bond we have, remained the same. We don’t even chat regularly, hahaha I know 🙂 with the advent of different social media, we just don’t! She just chat in whenever she likes to, I replied whenever… no pressure..no trick 🙂 But we know if one is needed, all ears and all day we’re for each other.

It’s about an hour drive from her place to mine, She drove early morning just to pick me up so we can see the golden sunrise at Makapu’u. It opens at 6 am, so we decided to have coffee and bagel with cream cheese for breakfast. GPS calculated we will be there in 30 minutes, just on time as the sun rises up!

Did we got on time?

Nope!

Traffic?

Nope!

Why?

We got lost!

Believe it or not, I think the address she put on GPS was a mistake! But it’s ok, we have all day to figure it out 😊 we just enjoyed the ride and eventually we got to our destination!

Makapu’u point lighthouse hiking trail – located at the southeastern part of Oahu, is an easy hike with a moderate inclined to 657 ft summit. It is also known as Kaiwi scenic shoreline. Theres no shady trees but its alright, it was a beautiful day to begin with. if we don’t stop often times to take photos we would easily reach the top within 30 min.

 

These trails are paved from parking lot to the top so, it’s really an easy way to the top, We’ve seen babies on stroller ( a good exercise for mom) men with dogs and little kids running. Awesome scenery, seeing the coastal view towards the Koko head.

The lighthouse is off-limits but we can still view it from the top.

early to rise, early to hike

One friday morning’, the only friday off I have 🙁 after working for five consecutive days, here I am waking up early at 4:30 in the morning, so I can meet my friends and hike in a mountain full of dust 🙂 and not to mention hills full of rocks and sands.

but don’t get me wrong, I always looked forward to the weekend activities with friends, full of laughters and of course, our tummy is full of food as well 🙂

My Lady no. 7 – Sophie Defensor- Victoria

so3aI lost two kilo in ten days and when my best friend came for a short holiday, I regained it in two days hahaha. That’s how we bond! We find happiness in food! Who cares we’re the beauties beyond fifties 🙂

My lucky lady at no 7 is a BSN (Bachelor of Science in Nursing) graduate of University of San Agustin, Iloilo City, born September 18, 1962.

She lives in London, UK . She comes to Jeddah, every six months to visit her husband and her friends, she has only one very handsome son, who is currently studying Chemical Engineering in UK.

Sophie is a very devoted mother, her dreams revolves around her only son..

Do you have any other dream for yourself?

– of course I do! I like to travel around the world.

You travel a lot! isn’t it? how long you’ve worked as expatriates?

– I’ve been in Jeddah for 26 yrs, I travelled around the world but it’s like a working holiday. I would like to explore the world without thinking about work. I have worked hard and I would like to retire while I still have energy and can enjoy the scenery.

What is your motto in life?

“Dream big, work hard. Stay focused and surround yourself with good friends “

My friend Sophie is a very energetic woman, she exudes a happy-go-lucky attitude but beware when she is not in the mood, her tongue is like a sword that cut deep 🙂

We didn’t have enough time to do all the chitchat, I still have to go back to work after we did the impronto photo shoot. Hopefully , I will do another photo shoot when I have the chance to visit her in London.

Home baked Cheesecake Challenge-Double 3 for a triple treat :Flavour # 33 Pineapple-Mango-Coconut Cheesecake

Here’s another batch of my official taster 🙂 I really do have good friends who can spend a day just having tea and Cheesecake. We spent 8 hours of good conversation, drowning ourselves with home-made tea concoction over an experimental home-baked cheesecake flavour #33, Yay!

I did two variations, one with toasted coconut2014-07-30 at 13-38-20

and one with a sweetened coconut and fresh mango bits on top

and I also did, a no bake Cheesecake and matcha green tea roll cheesecake, so it’s really a treat for everyone, or should I say..

” Sweet overload” 🙂

Ingredients:

Crust:

1/2 cup crushed digestive biscuits

1/2 cup roasted coconut flakes (desiccated)

3 tbsp sugar

1/3 cup butter

Filling:

3 pkgs (300 g each ) Philadelphia cream cheese

1 cup sugar

2 tsp vanilla powder

4 eggs

1/2 cup whipping cream

1/2 cup sour cream

1/8 tsp lemon

a pinch of salt

Toppings:

roasted coconuts

sweetened coconuts

fresh mango puree and cut bits

pineapple chunks

Directions:

Pre-heat oven Gas mark #3

Mix biscuits,coconuts,sugar and butter. Press onto the springform pan (i used different sizes). Set aside

Cream the cheese at room temperature, add sugar slowly while beating at medium speed. Add one egg at a time.Combine mixture of whipping cream,sour cream and vanilla powder,add it to the cream cheese mixture, add a pinch of salt and continue mixing until smooth and well combined. Pour onto the prepared pan. Bake at 1 hr, let it cool for another 30 minutes, leaving the oven door slightly ajar. (sudden change of temperature will result to cracking in the middle). Remove and let it cool for another one hour and chill for another 4 hrs or overnight before topping and serving.

Ladies, even though there’s a lot of sweet indulgence ( tummy rumbling) we manage to give a sweet smile!

Age 39…43…54…60 and more… who’s counting?

Year is ending so as our age is increasing, so far we celebrated 4 birthdays in a row and two more are coming. Who’s counting anyway? Does it matter if you are 30’s…40’s…60’s?

First celebration…to feel young and look young, we decided to change the colour of our hair and get some new hairstyle.

What else to do after pampering yourself? of course, celebrate with the family and friends.

When Ruby becomes Thursday with friends…

Ruby Tuesday

It is always good to see old friends , not old beyond fifty, I mean friends that I haven’t seen for a while. We had late lunch at Ruby Tuesday in Thalia St. the ambiance is just perfect for us.

They have a lot of  good menu but we’re not interested actually of what are we going to eat, were just happy to see each other again, just us…, without a husband…though the 2kevs (my youngest and my friend’s son) tag along, they have their own table and world of their own (as usual).

We spent the afternoon, catching up of the past things and latest news that’s happening to our everyday’s life. Sophie is working in UK and comes back to Jeddah every six months to see her family and Jo and I are both  in Jeddah but she is busy with her kids and helping her husband to run their small business and me?I am busy with my world too (home-kids-clinic-home). Some of our friends are still on holiday, lucky them!

Friends makes your life better,especially  in this place, socialization is a key to make your day if not your week a pleasant experience.

huh! research or no research, everyone knows how going out with friends relieves some of your stresses in life.
